PETRITIS 2019

Pale yellow color with fresh and greenish highlights. Demonstrating all the characteristics of the variety with peach, apricot, pear and apple flavors as well as a delicate bouquet of white flowers. Rich taste, almost oily, with a lively acidity and long lasting aftertaste. Suitable for at least three years of maturation.

GENERAL

At our boutique winery in Kyperounda, we have been crafting wines of the highest quality since 1998. Aiming for innovation and consistency in our production, our wines reveal and reflect their place of origin. Petritis wine is made from the indigenous white variety Xynisteri, grown in the mountainous vineyards of the region, located at an altitude of 1400m above sea level. Contrary to all rules, this is a Xynisteri wine that has ageing potentials. Pairs well with seafood and Mediterranean cuisine.

WINEMAKING

After harvesting, the grapes, remained for 12 hours in special cooling chambers. This was followed by de-stemming, crushing, cold maceration of the grape mass for 10 hours at 8-10° C, and static deboubage of the must. The next step was to graft the clarified must for commencement of the alcoholic fermentation which took place at 14-17° C and continued for 18-20 days.

GASTRONOMY

It is mainly paired with salads, fish and seafood dishes and white meats. Served at: 8-10° C..
