At our boutique winery in Kyperounda, we have been crafting wines of the highest quality since 1998. Aiming for innovation and consistency in quality, our wines which are made from indigenous and cosmopolitan grape varieties, reveal and reflect their place of origin. Although ready for consumption, further ageing in the bottle for another 2 or 3 years, will give it a rounder finish, and add more complexity and refinement to the flavor. It pairs very well with red meats and traditional Mediterranean dishes.
Immediately after harvesting remained in special refrigeration chambers for 12 hours until they reached the desired temperature of 15° C. The grapes were then de-stemmed and crushed and transported to special red vinification tanks for the necessary maceration of the color pigments dyes and tannins. The extraction process, along with fermentation, lasted 9-14 days in total. Finally, only the free-flowing wine was collected. The wine was matured partially for 6 months in French and American 225 and 300 liter barrels.
It is mainly paired with grilled and cooked red meats. Served: ideally at 14-15° C.
