At our boutique winery in Kyperounda, we have been crafting wines of the highest quality since 1998. Aiming for innovation and consistency in our production, our wines reveal and reflect their place of origin. Our Rose wine is produced from a blend of Shiraz and Grenache varieties. It should preferably be consumed within 18 months from its production. It is paired well with seafood, local delicacies and Asian, exotic dishes.
After harvesting, the grapes, remained for 12 hours in special cooling chambers. This procedure was followed by de-stemming, crushing, pre- fermentative cold extraction of the grape mass (18-24 hours at a temperature of 8-10° C) and static deboubage of the must. The next step was to inoculate the clarified must for commencement of the alcoholic fermentation. Fermentation took place at 15-16° C and continued for 18-20 days.
It is mainly paired with seafood dishes, pasta, white meats and creamy cheeses. Served: 8-10° C.
