GENERAL
Cabernet Sauvignon from high altitude vineyards. Eighteen-month maturation in 225 litre French oak barrels. Complex character with rich flavor and plentiful aroma of red fruit, peppercorn, sweet spices and vanilla. Great aging potential that can stretch beyond a decade. Pairs well with game dishes, red meats, hearty casseroles and mature, robust hard cheeses.
WINEMAKING
After harvesting, the grapes remained for 10 hours in special refrigeration chambers until their temperature reached 15°C. The grape mass was then crushed and transported to red vinification tanks. This was followed by maceration of the grapes with frequent pumping over of the must at a temperature of 25°C. This process lasted for 18-22 days. At the final stage of the process, it is only the free-run wine that was collected from the tank and transferred to the barrels. It matured patiently for 18 months in small French barrels of 225 and 300 liters.
GASTRONOMY
It pairs mainly with lamb, game dishes and variety of hard cheeses. Served at: 14-16°C.
