GENERAL
The Syrah and Cabernet Sauvignon grapes from our own vineyards, produce a noble wine that matures for 24 months in new oak barrels from French forests. Dense and luxurious dark red colour with a strong, aromatic character and a rich, robust taste. A red wine with great ageing potential that will continue to improve while in bottle for another 8-10 years. It can be the ideal pairing for powerful dishes such as game, red meats, hard cheeses or cured pork meats. Serve at 16-18°C.
WINEMAKING
After harvesting, the grapes, were stored in special cooling chambers for 10 hours until they reached a temperature of 15°C. This was followed by the de-stemming, breaking and transfer of the grape mass to open red wine tanks. Extraction of the grapes followed, with frequent stirring of the must at a temperature of 25°C. This process continued for 40 days. After completion of this stage, only the free flowing wine was collected from the tank and transported to the barrels. The wine was matured in small French barrels of 225 and 300 liters for 12 months and for a further 12 months in large barrels of 600 litreers each.
GASTRONOMY
To be combined mainly with game dishes, red meats, hard and mature cheeses. Served at: 16-18°C.
