GENERAL
Chardonnay fermented and matured in 225 and 300 litre French oak barrels. A noble complexity with rich flavor and persistent aromas of ripe yellow fruit, a hint of vanilla, butter, honey and nuts. A cosmopolitan white wine which defies time and is suitable for all occasions. Pairs well with fish, white meats, pasta and various Mediterranean dishes.
WINEMAKING
After harvesting, the grapes were kept for 12 hours in special refrigeration chambers until their temperature reached 5° C. This process was followed by destemming, crushing and cold extraction of the grape mass (8-14° C). Gentle pressure was applied on a pneumatic press. Grafting was carried out with commercial yeasts and fermentation took place at 14-18° C in French 225 and 300 liter barrels and continued for 20-25 days. The wine was left with the lees in the barrels to mature for about 6 months.
GASTRONOMY
It pairs mainly with oily fish, white meats and semi-hard cheeses. Served: 10-12° C.
