GENERAL
Shiraz from specially selected vineyards in Limassol area. Twelve month maturation in 225 litre French and American oak barrels. Complex character with stout flavors of red fruit, black peppercorn, warm spices and vanilla and an intense, multidimensional aroma. Great aging potential that expands beyond a decade. Pairs well with red meats, game dishes, hard and semi-hard cheeses./p>
WINEMAKING
The grapes after cutting, remained for 12 hours in special refrigeration chambers, until their temperature reached 15°C. This was followed by an explosion, a breakdown and the grapevine was transported to red vinification tanks to extract pigments and tannins. The extraction process, along with fermentation lasted 12-15 days. Finally, only the free wine was collected. The final product matured for 12 months in French and American barrels of 225 and 300 liters.
GASTRONOMY
It is mainly paired with red meats and hard cheeses. Served: 14-16°C.
