GENERAL
Chardonnay fermented and matured in 225 and 300 litre French oak barrels. A noble complexity with rich flavor and persistent aromas of ripe yellow fruit, a hint of vanilla, butter, honey and nuts. A cosmopolitan white wine which defies time and is suitable for all occasions. Pairs well with fish, white meats, pasta and various Mediterranean dishes.
WINEMAKING
The grapes after cutting, remained for 12 hours in special refrigeration chambers until their temperature reached 5° C. This process was followed by eruption, breakage and cold extraction of the grape mass (8-14° C). Gentle pressure was applied on a spiritual press, the forerunner was selected and finally the static release of the must, followed. The vaccination was carried out with commercial yeasts and the fermentation took place at 14-18° C in French barrels of 225 and 300 liters and lasted for 20-25 days. The wine remained with the wine lees included in the barrels for maturation for about 6 months.
GASTRONOMY
It is mainly combined with greasy fish, white meats and semi-hard cheeses. Served: 10-12° C.
